Let me introduce you to Cecilia’s Sauces, LLC and myself, Amy Dixon. We specialize in Hatch NM Red Hot Chile Sauce or as it is sometimes referred to as Enchilada Sauce. This red chile sauce is like no other, it’s made with spices and much love and was born in my hometown of El Paso, TX. This red chile recipe comes from the hardest working most loving woman I know, my mother. Which is why I wish to share her recipe and story with the world.
Our mother Cecilia came from humble beginnings. She was 3 months old when her and her 2 sisters lost their mom. Their dad quickly picked up the slack and brought them up as best he could by himself. Along came a good woman with children of her own who helped Grandpa Gilbert with raising his 3 girls, cooked a good meal, cleaned his house, and raised her own 4 children. A real Ysleta “Brady Bunch”. Back in the old days, things were simpler, or so we think. Mom started taking care of babies when she was a baby herself and that’s where her work ethic developed. She then got a job at the drug store soda counter where she got the attention of a much older guy; 6 years older. For a 13 year old to attract a 19 year old, you have to wonder what the heck those days were like. She just looked older than her 13 years. Cecilia’s Red Hot Chile Sauce was born in her kitchen and passed down to her children. Enchiladas were her specialty and we never tired of eating them along with our staples of beans and rice. We were a typical Mexican family loving life and enjoying our mama’s cooking. As I think back at how many times we made Cecilia’s Red Hot Chile Sauce, before it was ever named or coined, people ate the sauce and begged for more. Until our move to Florida we hadn’t realized how big this could be. Making it and sharing it with our friends and family was our number one priority. Second priority is selling it to the masses so they too can enjoy the goodness of this Gluten Free, no additives, full flavored sauce that Cecilia cooked many times over as we were growing up.
