Celebration on the Horizon

The McClure saga continues! Mom and dad always supported us in everything we did. They constantly showed up for us by providing positivity, care, and direction. After the introduction of the 2nd born, along came another girl, Amy. As I was growing up, mom loved to tell me the story of how I was named. She actually picked my name off a chart that was hung at Johnstone Clinic where I was born. She mentioned when my tio Genaro and tia Jovie Melendez came to see her at the hospital, tio asked her in his most brusque manner if she was going to name me with a long name like Armida Cecilia and Antonio, Jr. She said no, it will be Amy, meaning beloved. I certainly do feel beloved.

Our parents, Tony and Cecilia, raised 6 of us in Ysleta. We survived and we’ve all made our contributions to society and family and I feel the Lord has blessed me exponentially. My journey has taken me to reside in three beautiful states. First, Texas, then Arizona where I was for almost 40 years then transplanted to Florida. My life has been a whirlwind of decisions, plans, loss, gain, love, growth, but mostly blessings. My strength comes from mom. I learned how to be a mom through ours. As most moms know, there is no roadmap or manual, just a lot of praying and hoping you did it right. Growing up, we were always surrounded by children. First cousins, then nieces and nephews, then our own children. Among the six of us we share 17 of mom and dad’s grandchildren and 15 great-grandchildren, some we’ve lost too soon. I never had a child of my body, but one of my heart. His name is Tyler. After many years of being childless, along came this little blonde boy who 30 years later is now my website creator, social media advisor, and my friend.

I have been known to be blunt, know what I want, and go for it. Most know where I stand and I wear my heart on my sleeve. I want to share my mom’s love for cooking red chile and my deepest desire is to make my family proud and have us all share in our parent’s memory and blessing.  Thanks to God, I have been given the talent, moral support from family and friends, and gumption to endure such a feat of learning all the ropes of a startup and survive all the red tape. Thanks to my husband, Jimmie for having the time to complete a required College course to then allow Cecilia’s to be endorsed to operate. Thanks to our partner, Tony for listening to his heart and believing in my vision of making this dream come true and rolling up his sleeves to help us out in the kitchen. We are fully launched and welcome your feedback.


Speaking of kitchen, we marinated  some Flap Meat in Cecilia’s Red Hot Chile Sauce, and boy was it delicious. Layer the meat in a dish with a lid, pour Cecilia’s between each layer and leave it in the refrigerator overnight. Put it on a smoker or grill and enjoy!
